As part of the USDA "Know Your Farmer, Know Your Food" effort to create new economic opportunities by better connecting consumers with local producers, FSIS will host two Web outreach seminars this January on mobile slaughter units.
Mobile slaughter units are self contained slaughter facilities that can travel from site to site. Typically, the units provide slaughter services to regional small producers at conveniently located host farms. FSIS-inspected mobile slaughter units provide a feasible option for small livestock producers wanting to provide safe, wholesome meat product to local and interstate consumer markets.
Each seminar will highlight inspection issues unique to mobile slaughter units as presented by industry and Agency experts. The seminars will also include information on USDA Rural Development loan and grant programs available to under-served rural areas.

Sanitary Dressing Procedures
FSIS will host three NetMeeting Webinars, Thursday, January 21, 2010 from 11:30 a.m. - 1:00 p.m. ET; Thursday, February 18, 2010 from 11:30 a.m. - 1:00 p.m. ET, and Tuesday, March 23, 2010 from 11:30 a.m. - 1:00 p.m. ET on Sanitary Dressing Procedures. | Presentation Slides (PPT, 2.6mb)
During the sessions, participants will gain insight on how FSIS will verify that Sanitary Dressing Procedures are being followed, how Sanitary Dressing Procedures are critical to reducing E. coli O157:H7 to undetectable levels, and how to verify that plant interventions are validated and used as intended. Participants will also become aware of the triggers that indicate that Sanitary Dressing Procedures may be out of control and have a greater understanding of validated HACCP plans and interventions.
