Livestock Slaughter and Meat Labeling Regulations in Vermont--April 28, 2011 at 12 p.m.

Join Randy Quenneville, VT Meat Inspection Program Chief to learn about the multi-faceted regulations for livestock slaughter and meat labeling at the state and federal level.  The Vermont Meat Inspection Program has been in existence since 1967 and has always been focused on facilities and practices that will promote and enhance food safety principles. The program covers the gambit from commercial and custom slaughter and processors, wholesalers, retailers and small farm operations.  Randy will explain the current regulations with regard to different species and markets, including poultry slaughter requirements.  He will also review state labeling guidelines and where to learn more if you plan to move to USDA approved slaughter and labeling.  Participants will have the opportunity to ask questions.
Randy Quenneville has been involved with the Meat Industry for over 30 years starting in a small local slaughter facility learning the slaughter and processing trade. In 1985 he moved into the inspection field for the state of Vermont in the Chittenden county area. After nine years Randy moved to a compliance position covering the areas of the industry not under daily inspection and worked with many farmers and producers to help them understand the requirements for marketing meat and poultry products.  Currently, Randy is the VT Meat inspection Program Chief.
